Mexican Appetizer Recipes – Nacho Supreme
Nacho is traditionally a Mexican food made from corn. However, its origin is associated with Tex-Mex cuisine. When in 1940s, a restaurant worker on the Texas-Mexico border came up with the idea of melting a slice of Longhorn cheddar on a tortilla chip and adding a jalapeno pepper slice.
Today there are more exotic variations from multitude toppings of vegetables, meats and sauces.
One such is ‘Nacho Grande’ made from refried beans, tomato and lettuce, topped with shredded cheddar cheese or a cheese sauce and sliced jalapeno peppers.
Then you have ‘Sea Food Nacho’made from shrimp and whitefish or salmon with queso blanco cheese and so on.
Ingredients:
1 cup – Tortilla chips
1 cup – Salsa
1 cup – Refried beans
1/4 cup – Sour cream
1/4 cup – Jalapenos
Method:

Put the refried beans and salsa over it.
Pour the cheese sauce and add the jalapenos.
Bake and serve with sour cream.
If you do not want to add the salsa you can serve it as an accompaniment.
Nacho Sauce
Ingredients:
1 tbsp – Butter
1 cup – Nacho cheese or Cheddar cheese
1/4 cup – Milk
1 tbsp – Corn starch
Method:
Melt butter over medium heat in a small sauce pan.
Then add cornstarch.
Keep stirring the butter constarch and gradually add milk.
Once the mix begins to thicken add cheese.

Refried Beans
Ingredients:
1 tbsp – Olive oil
1 cup – Pinto beans or Kidney beans
1 tsp – Chilli pepper roasted or red chilli powder
1/4 tsp – Cumin powder
1 tbsp – Cilantro finely chopped (optional)
1 tbsp – Garlic chopped
1 No – Red onion diced finely
1 No – Tomato diced finely
1/2 tsp – Taco seasoning
Salt to taste
Method:
Heat oil and saute the onions and garlic for about 2 mins.
Then add the remaining ingredients and combine.

You can serve refried beans as a side dish. Or use it as a taco or burrito filling.
