Mexican Appetizer Recipes – Chilli Tostadas
Tostadas originated in Mesoamerica.
In Mexico, they are referred as flat or bowl-shaped tortillas which are either toasted or deep fried, or alternatively to a finished dish using a tostada as a base. Usually corn tortillas are used to make tostadas.
Ingredients:
3 tbsp – Olive oil
3-4 No – Corn tortillas
2 No – Spring onion finely chopped
1/4 cup – Corn kernels boiled
1/4 cup – Peppers sliced
3 tbsp – Olives chopped
3 tbsp – Zucchini chopped
3 tbsp – Mushrooms chopped
1/2 cup – Cheddar or jack cheese
Pepper to taste
Salt to taste
Chilli Mix
2 tbsp – Olive oil
1 1/2 tsp – Garlic chopped
1 tsp – Ginger chopped
1/2 cup – Jalapenos finely chopped
1/4 cup – White vinegar
1/4 cup – Sugar
Two pinch salt
Method:
Heat oil in a pan and fry the garlic and onion till translucent.
Add the rest and boil until thick.
Remove and store in an air tight container in the refrigerator.
Cut the tortillas into 2.5 inches circles using a round cookie cutter. Alternatively make wedges.
Heat oil in a pan and fry either side till lightly brown and crisp.
Spoon the chilli mix on each of the tortillas.
Mix the vegetables with the seasoning.
Then spoon the vegetable mix on each of the slices.
