Chipotle Bean Tostada

Jalapenos are extensively found in Mexico and U.S.
A chipotle is a smoke-dried jalapeno chili used primarily in Tex-Mex, cuisine.
The red variety is placed in the ground using the disc harrow. They are kept on the vine as long as possible. When the jalapenos are deep red and have lost most of their moisture, they are selected for making chipotles. Buy Razzpotle Roasted Raspberry Chipotle Sauce


Ingredients:
1/4 cup - Oil
10 No - Tortillas
1/2 cup - Corns boiled
1/2 cup - Tomatoes diced
1 cup - Feta cheese


Bean Mix
2 tbsp - Oil
2 cup - Beans
1 No - Onion chopped
1/2 tsp - Cumin ground
2 tbsp - Chipotle tabasco sauce
1 cup - Water
1/2 tsp - Salt


Method:
Heat oil in a pan and fry the onion till translucent.
Add the cumin beans, salt and water.
Mash the beans into the pan, until the consistency is (somewhat lumpy) mashed potatoes.
Cook for a few minutes on medium heat until water is absorbed.
Stir in the chipotle sauce and add more salt if needed.
Remove and set aside.

Heat oil in a pan and fry either side of the tortillas till golden brown.
Place the cooked tortilla on the paper towels to absorb more of the oil.
Spoon the bean mix on the tortillas and add corns, cheese and tomatoes.
Place them under a grill for 2 mins and serve.
You can have guacamole or/and sour cream as an accompaniment.

Chilaquiles

Chilaquiles are a traditional a traditional Mexican dish, usually served at breakfast.
It is a recipe made from leftover tortillas and salsas. Corn tortillas are quarters and fried and green or red salsa and poured over the crispy tortillas, and this is known as "totopos." The dish is topped with cheese (queso fresco) and/or with sour cream (crema), and usually served with refried beans.


Ingredients:
10 No - Tortillas
1/4 cup - Oil
1 cup - Green salsa or salsa roja
4 tbsp - Onion chopped
1/4 cup - Cream
Salt to taste


Method:
Cut the tortillas into 2.5 inches circles using a round cookie cutter. Alternatively make wedges.

Heat oil in a pan and fry either side of the tortillas till golden brown.
Add a little oil to the pan and bring to high heat again and add the salsa and let salsa cook for a few minutes.
Then add the fried tortillas to the salsa.
Gently turn over the pieces of tortilla until they are all well coated with salsa.
Add cheese and allow it to melt.
Garnish with onions and cream and serve.
