Mexican Appetizer Recipes - 4


Chimichangas


Ingredients:
6 No - Tortillas
5 tbsp - Oil
1 No - Onion large finely sliced
1 tsp - Garlic chopped
1 No - Green or red pepper large finely sliced
1/2 cup - Rice cooked
1 cup - Refried beans
1/2 cup - Mozzarella or cheddar cheese
Salt to taste


Method:
Heat oil in a pan and saute garlic, onions and peppers until the onions are soft.
Combine the saute ingredients with the rest.
Take out your flour tortillas and divide the rice mixture for each tortilla.
Sprinkle some cheese over the rice mixture.
Warm the tortillas in a microwave to soften them.
Then roll the tortillas, making sure that the sides are tucked in tightly so that the filling stays in.
With the flap side down, place the chimichanga onto a baking sheet.
Brush oil over the chimichangas and bake until golden brown.

Mexican Appetizer Recipes - 5


Chilli Tostadas


Ingredients:
3 tbsp - Olive oil
3-4 No - Corn tortillas
2 No - Spring onion finely chopped
1/4 cup - Corn kernels boiled
1/4 cup - Peppers sliced
3 tbsp - Olives chopped
3 tbsp - Zucchini chopped
3 tbsp - Mushrooms chopped
1/2 cup - Cheddar or jack cheese
Pepper to taste
Salt to taste


Chilli Mix
2 tbsp - Olive oil
1 1/2 tsp - Garlic chopped
1 tsp - Ginger chopped
1/2 cup - Jalapenos finely chopped
1/4 cup - White vinegar
1/4 cup - Sugar
Two pinch salt


Method:
Heat oil in a pan and fry the garlic and onion till translucent.
Add the rest and boil until thick.
Remove and store in an air tight container in the refrigerator.

Cut the tortillas into 2.5 inches circles using a round cookie cutter. Alternatively make wedges.
Heat oil in a pan and fry either side till lightly brown and crisp.
Spoon the chilli mix on each of the tortillas.
Mix the vegetables with the seasoning.
Then spoon the vegetable mix on each of the slices.
