Lentil Stew

Stew Recipe - 1


Red lentil Stew


Ingredients:
1 tbsp - Olive oil
3/4 cup - Red lentil cooked
1 No - Onion large chopped
1 No - Garlic clove chopped
1 No - Carrot large chopped
1 No - Red bell pepper large chopped
1 No - Potato large boiled mashed
1 No - Celery stick chopped
1/4 cup - Tomatoes chopped
2 No - Vegetable stock cubes
3 cup - Water
1/4 tsp - Paprika
1 tbsp - Parsley
Salt to taste


Method:
Heat oil in a stock pot and saute onion garlic till soft.
Add the vegetables and fry till soft.
Add the tomatoes, potato and seasonings.
Dissolve the stock cubes in water and add it along with lentils.
Cook until lentils are tender, for about 1 hour. Serve hot.

Recipe - 2


2 tbsp - Olive oil
1 No - Red onion large chopped
1 No - Tomato large chopped
1 No - Courgette large chopped
1 No - Carrot large chopped
1 No - Red pepper large chopped
1 1/2 cup - Borlotti beans or kidney beans cooked
2 No - Garlic cloves minced
2 cup - Brown stock
1/4 tsp - Red chilli powder
2 tbsp - Coriander chopped
Salt to taste


Method:
Heat oil in a stock pot and saute onion garlic till soft.
Add the vegetables and fry till soft.
Add the seasonings, tomatoes and beans and cook for 5 mins.
Stir in the stock and bring to a simmer. Cook for a while.
Garnish with coriander and serve hot.
Serve with bread rolls.
