Lentil Stew – Vegetable Coconut Stew

Ingredients:
1 tbsp – Oil
1/8 cup – Shallots chopped
2 No – Aubergines chopped
6 No – Yam pieces chopped
6 No – Yak pieces chopped
8-10 No – Runner beans chopped
1 cup – Red lentils
1/4-1/2 tsp – Turmeric
1/2 cup – Coconut milk
2 tbsp – Coriander chopped
1 tbsp – Tamarind pulp
1 tbsp – Ginger grated
1 tbsp – Garlic grated
1 tbsp – Chilli minced
2 cup – Water
Salt to taste

Method:
Soak the lentils overnight so that they do not take to long to cook or atleast 4-5 hours before use.
Heat oil in a stock pot and fry the ginger, garlic onion till brown.
Add the coriander, salt and turmeric and water.
Once the lentil is 3/4th cooked add the coconut milk and vegetables (add more water if needed).
Let the mix simmer and cook till done.
Serve hot with rice.
