Lentil Stew – Red Lentil Stew
Ingredients:
1 tbsp – Olive oil
3/4 cup – Red Lentils cooked
1 No – Onion large chopped
2 No – Garlic clove chopped
1 No – Carrot large chopped
1 No – Red bell pepper large chopped
1 No – Potato large boiled mashed
1 No – Celery stick chopped
1/2 cup – Tomatoes peeled chopped
2 No – Vegetable stock cubes
3 cup – Water
2 tbsp – Tabasco/hot pepper sauce
1 tbsp – Parsley
Salt to taste
Method:
Soak the lentils over night or 5-6 hours before cooking. Since they go soft they tend to cook better and faster.
Heat oil in a stock pot and saute onion and garlic till soft.
Add the vegetables and fry for 2 mins.
Add the tomatoes, potato and seasonings.
Dissolve the stock cubes in water and add it along with lentils.
Cook until lentils are tender, (about 1/2 hour). Serve hot.
Adjust seasoning and water if required.
