Lentil Stew – Caramalised Onion Lentil Stew
Ingredients:
2 tbsp – Butter
2 No – Onions large diced
1/2 tsp – Paprika mild
1 No – Green pepper diced
4 cup – Broth
1/2 tsp – Cinnamon ground
1/2 tsp – Nutmeg grated
200 gms – Puy lentils
4 tbsp – Parsley
1/4 cup – Sour cream
Salt to taste
White pepper to taste
Method:
Heat a pan add one onion and peppers cover and let it steam for 2-3 mins.
Add the seasonings (1/4 ntumeg), lentils and stock cover and leave until the lentils soften.
In another pan heat butter and add the left over onions and cook till golden brown.
Add remianing nutmeg and mix.
Add parsley to the lentil and mix.
Serve with a dollop of sour cream and caramelised onions on top.
