Lentil Stew – Black Bean Stew

Ingredients:
1/2 cup – Sweet corns
1/2 cup – Black beans cooked
2 tbsp – Olive oil
2 No – Spring onion julienne
1 tsp – Creole mix
1 cup – Broth
1 No – Leek stalks julienne
1 No – Bell pepper julienne
1 tbsp – Garlic minced
2 cup – Tomatoes peeled chopped
1 tbsp – Worcestershire sauce
1/2 tsp – Cayenne pepper
2 tbsp – Parsley chopped
Salt to taste

Method:
Heat oil and add onion, garlic, pepper and leek sauté until slightly wilted.
Add the corns and tomatoes and cook for about 1-2 mins.
Add creole seasoning bring to a boil lower to a simmer.
Add the stock and beans simmer about 20 mins.
Add worcestershire sauce and parsley. Adjust seasoning.
