Lentil Stew – Bean Stew
Ingredients:
2 tbsp – Oil
1 No – Red onion large diced
1/2 cup – Cabbage broad diced
1 No – Courgette large broad diced
1 No – Carrot large diced
1/2 tsp – Garlic minced
1/2 tsp – Ginger minced
2 No – Red pepper jar roasted
1/4 tsp – Coriander powder
1/4 tsp – Cumin powder
1/4 tsp – Red chilli powder
1 1/2 cup – Borlotti beans or kidney beans cooked
2 cup – Brown stock
2 tbsp – Coriander chopped
Salt to taste

Method:
Heat oil in a stock pot and add onion, garlic, ginger and vegetables and cook for 2-3 mins.
Add the powders and stir.
Blend the peppers and add along with stock and beans.
Simmer and cook for a while 15-20 mins.
Garnish with coriander and serve hot.
Serve with bread rolls.
