Lentil Stew Recipes - 7


Squash Lentil Stew


Ingredients:
2 tbsp - Oil
1 cup - Yellow or pigeon lentils
1/4 cup - Banana stem chopped
1/4 cup - Butternut squash diced
1 tsp - Green chillies finely chopped
1/2 tsp - Garlic finely chopped
1 No - Lemon small
White pepper to taste
Salt to taste


Method:
Heat oil in a pan and saute the garlic and green chillies till translucent.
Boil puree and add the yellow lentil.
Add the banana, squash pieces and seasonings.
Cook till the squash is soft and sprinkle pepper and serve.

Alternatively you can steam the squash as well. But be careful as the squash cooks fast and the banana stem takes longer time. Buy Split Pigeon Peas


Recipe - 8


Black eyed bean stew


Ingredients:
2 tbsp - Oil
1 cup - Black eyed beans
1 No - Onion chopped
1/4 cup - Peppers chopped
1/4 cup - Carrots chopped
1/4 tsp - Garlic finely chopped
1 tsp - Lemon juice
1/4 tsp - Thyme
1/4 cup - Vegetable stock
1/8 tsp - Red chilli powder
Pepper to taste
Salt to taste

Method:
Heat oil in a saucepan and saute the onion, carrots, pepper, garlic, thyme for about 5 mins.
Add the stock and bring it to a boil.
Reduce the heat to simmer, stir in the beans and seasonings.
Cover and simmer until the vegetables are tender.
If needed add more stock or water as necessary. Buy Black Eyed Peas
