Mexican Bean Stew


Ingredients:
1 tbsp - Olive oil
1/2 cup - Pinto beans
1/2 cup - Black beans
1 tbsp - Garlic chopped
4 tbsp - Bell peppers chopped
1/4 cup - Corn kernels boiled
4 tbsp - Button mushrooms
1 No - Onion large chopped
1 tsp - Mexican spice mix
1 tsp - Cayenne pepper
1 tsp - Basil chopped
2 cup - Tomatoes
Pepper to taste
Salt to taste


Method:
Soak the beans overnight so that they do not take to long to cook. Buy Eden Organic Black Beans
Place the beans in a large pot cover with water. Bring to a boil and cook till tender. Buy Eden Organic Pinto Beans
Heat oil in a stock pot and fry the onions, pepper and garlic and cook till the onion turn pinkish.
Add the remaining ingredients.
Bring to a boil and simmer and cook for a while.
Serve hot.

Stew Recipe - 6


Vegetable Lentil Stew


Ingredients:
1 cup - Red Lentils
1/4 cup - Cauliflower florets chopped
1/4 cup - Onion chopped
1/4 cup - Carrots chopped
1/4 cup - Green beans chopped
1 cup - Vegetable red stock
1/4 tsp - Ginger finely chopped
1/4 tsp - Garlic finely chopped
1/2 tsp - Mixed herbs
1/4 tsp - Red chilli powder
3 cup - Water
Salt to taste
Pepper to taste


Method:
Add the vegetables, seasonings, lentils in a stock pot or crock pot (slow cooker).
Cook over al low fame till done (will take about 5-6 hours) Then add the stock and cover and cook on a low flame for 10-15 mins till done.

Alternatively add 2 cups water to the lentils and cook in a pressure cooker for 7-10 mins.
Remove and set aside.
Take a stock pot and add all the ingredients in it with 1 1/2 of water and cook on a low fame till vegetables are soft and well combined.
