Lentil Stew


Lentil Stew - 3


Spinach Stew


Ingredients:
1 tbsp - Olive oil
1 No - Bay leaf
1 No - Onion large chopped
1/2 tsp - Ginger chopped
1/2 tbsp - Garlic chopped
1/2 cup - Brown lentil
1/2 cup - Red Lentil
5 cup - Water
1 cup - Tomato chopped
1 cup - Spinach chopped
1 tsp - Cumin powder
1 No - Cinnamon stick
1/4 tsp - Red chilli powder
1 tbsp - Coriander powder
1 tbsp - Coriander fresh chopped (optional)
1 tsp - Lime juice
Salt to taste


Method:
Heat oil in a stock pot and fry bay leaf, ginger, cinnamon stick, onion, and garlic till brown.
Add the tomatoes, spinach and seasonings and continue to cook for about 5 mins.
Add potatoes and lentils and water.
Cover the pot and simmer for 2 1/2 hours, or till the lentils are tender.
Discard the bay leaf and cinnamon stick.

Lentil Stew - 4


Coconut Stew


Ingredients:
1 tbsp - Oil
1 cup - Red or Brown lentils
1 cup - Coconut milk
1 tbsp - Ginger chopped
1 tsp - Green chillies finely chopped
1 No - Onion large chopped
2 tsp - Coriander powder
1/4 tsp - Turmeric
1 tbsp - Garlic chopped
1 tsp - Cumin powder
2 cup - Water
1 No - Potato large chopped
1/4 tsp - Pepper
Salt to taste


Method:
Soak the lentils overnight so that they do not take to long to cook.
Heat oil in a stock pot and fry the onions till pinkish.
Add the ginger and garlic and keep stirring until fragrant, about a minute.
Add the remaining ingredients.
Bring to a boil and simmer and cook till tender.
Serve hot with rice.

You can replace the coriander, turmeric, cumin powder with 1 1/2 tbsp with curry powder.
