It is believed that lentils originated about 10,000 years ago, in Greece.
Because they were inexpensive the wealthy Greeks despised it. And for years, they were eaten by peasants, and were considered, a poor man's meat substitute food.

During the bronze era, lentils spread to the Middle Eastern and Indian subcontinent.
Since, Indian cultural has largely been a vegetarian one. Lentils were seen as good source of proteins. Hence, it soon became an essential part of their cuisine.

Lentil Facts
Dried legumes and their edible seeds are called pulses.
Pulses are further classified into 3 categories - lentils, beans and peas (though loosely all are termed as lentils).
They are available in a wide range of flavours and textures. With multiple colors that range from yellow, green, red, brown and black etc.
They are either eaten whole (with the skin still intact) or split in half (with or without their skins).

Lentils for Health
Lentils have great nutritional value.
They are rich in dietary fibre, minerals and high in proteins, vitamin B.
In fact, many lentils like chick peas, whole lentils can be sprouted to boost nutritional value.
If you compare with beef, 100gms of lentils equals to about 134gms beef in proteins content. Peas when frozen only retain 1/4th of their original Vitamin C. So, it is better to have them fresh.


Cooking Lentils
Dried lentils can be stored for long periods up to a year or more. But with time they get more hardened. So they need longer soaking hours.
When cooking always discard the water in which lentil are soaked. Replace, with clean fresh water.

If using a pressure cooker you would need a minimum of 3 whistles and then turn the heat low for approx, 15 mins and let the lentils cook. Or alternatively you can even boil and cook lentils, but it takes longer time.

Make sure you thoroughly cook kidney and black beans, before eating, as they contain high toxins.

Never add salt or make acidic additions like lemon juice or vinegar, until beans are nearly cooked or else they tend to toughen.

Lentil Recipes - 1


Rajasthani dal - (Panchmel/Panchwati/Pachrangi Dal)


Ingredients:
4 tbsp - Oil
3 No - Cloves
1/4 cup - Yellow lentil (channa dal)
1/4 cup - Moong lentil (sabat moong)
1/4 cup - Black Lentil (urad dal)
1/4 cup - Pigeon Pea (tur dal)
1/4 cup - Brown lentil (masoor)
1 inch - Ginger
2 No - Red chilli dry
1/4 tsp - Chilli powder
1/4 tsp - Green chilli paste
1/2 tsp - Cumin seeds
1 tsp - Cumin powder
1/2 tsp - Garam Masala
2 tbsp - Fresh coriander finely chopped
1/4 tsp - Turmeric
2 No - Tomatoes large finely chopped
1 tbsp - Coriander powder
Salt to taste


Method:
Soak the lentils in water for 4 hrs, add turmeric, salt and cook till done by boiling (do not steam it will change the flavour).
Heat oil in pan and add cumin, cloves, dry red and cook for a minute.
Add cumin powder, coriander powder, salt, chilli powder, ginger, green chilli paste and the tomatoes.
Cook till the mix is done (leaves oil) if needed add little water.
Add the lentils and keep stirring for 10 mins. Serve hot with rice or masala chapattis.
