Lentil Recipes – Mushroom Bean Stew

Ingredients:
1 tbsp – Oil
1 No – Onion chopped
1/4 cup – Mushrooms chopped
3 No – Garlic clove minced
1 tbsp – Lemon grass chopped
4 cup – Broth
1 tsp – Lemon zest grated
1 tbsp – Parsley
1 cup – White beans/adzuki beans/green lentils
Sea salt to taste
Pepper to taste

Method:
Heat oil and add onion, garlic sauté until slightly wilted.
Add the remaining ingredients and stir. Let the mix simmer till done.
Garnish with lemon zest and parsley serve.
