Italian Cooking Recipes


Variety flavour and style in Italian cooking recipes, reflects the contribution made by different civilisations, throughout the Italian history.

The earliest impact was of Romans and Greeks. Politically they controlled the territory for around 2000 years. During which they not only locally cultivated grains, but also imported varieties of foods such as spices, wines, etc mainly from China. Arabs made their culinary contribution by introducing a series of products like spinach, almonds, rice. Research shows that the Arabs gave Italy atriya, string noodles made from wheat and flour, which, is the mother of modern day spaghetti.

The renaissance era, almost changed the face of Italian cooking. They not only added a zing to art and culture, but refined tastes. Explorers like Christopher Columbus, made expeditions to the New world and brought a host of new ingredients tomatoes, peppers, chilies, corn and potatoes, which were unseen and unheard of in the Italian kitchens.

Modern day Italy unified itself in 1861.
All the small dukedoms and kingdoms came together, to form a unified country under a common Italian language. Despite this regional differences remained because of the climatic conditions and past influences.

Today if one travels to Italy they will notice, that not only each region have its own cooking style, but it even varies from, community to community.
Therefore one finds rich creamy sauces, risotto and polenta being more popular over pasta's in the North, clearly citing a strong Germanic influence.
While the hot climate of the South facilitates the growth of tomatoes, citrus fruits and vegetables and cattle rearing has given the region a variety of cheeses such as provolone, mozzarella, and ricotta. This answers why Pizzas are so popular in Naples.
The centre is characterised by miles of olive groves and vineyards both of which, are popularly used in culinary preparations.

Despite the differences traditional food still lies at the core of the cultural identity of Italy. Two most common ingredients which form the base of Italian cooking recipes are olive oil and pastas.
