Italian Appetizers - 1


Garlic Bread


Ingredients:
1 No - Oblong or French bread
4 tbsp - Butter
1/2 tsp - Garlic minced
1 tsp - Herbs
1/2 tsp - Salt


Method:
Beat the butter, garlic, herbs and salt and set aside.
Slice the bread in a slant only making half an inch thick slices. Make sure the bread remains intact and doesn't cut al the way through.
Wrap in a foil and bake for 8-10 minutes till the crust is crisp. Buy Quick Loaf Garlic & Herb Quick Bread


Appetizer - 2


Bruschetta


Ingredients:
1 tbsp - Olive oil
1 No - French bread small
2 No - Tomatoes
2-3 No - Basil leaves chopped
1 tsp - Garlic
1 tsp - Paprika
2 tbsp - Parmesan cheese
Pepper to taste
Salt to taste


Method:
Chop the tomatoes in small chunks.
Mince garlic, basil and paprika in a bowl.
Add olive oil, tomatoes, salt and pepper.
Refrigerate for 2 hours.
Spoon the mixture on to each bread slice and garnish with cheese.


Variation
1 tbsp - Olive oil
1 No - French bread small
2 No - Tomatoes
2-3 No - Basil leaves chopped
1 tsp - Garlic
1 No - Peppers chopped
2 tbsp - Parmesan cheese
1/4 tsp - Pepper
Salt to taste


Method:
Blanch the tomatoes, cut and add the seasonings.
Baste the peppers with olive oil and grill till the covering blisters (mildly burnt).
Mix all.
Toast or lightly fry the bread slices and spoon the mixture on each of the slices and serve.
