Italian AppetizersItalian Appetizers - 3 Aubergine Pesto Ingredients: 3 No - Tortilla wraps 2 No - Aubergine medium thinly sliced 2 No - Red bell pepper medium chopped 5 tbsp - Olive oil 2 No - Garlic clove minced 2 No - Garlic chopped 2 tbsp - Pine nuts or walnuts 1 tbsp - Lemon juice 2 tbsp - Parmesan cheese 1/8 tsp - Pepper Salt to taste Method: Mix the 1/2 tbsp olive oil, garlic and seasoning in a bowl. Add the aubergines and allow it to marinate for 15-20 mins. Apply some oil to the bell pepper. Put the two in the oven for grilling. Remove the aubergines once brown. Continue to cook the peppers till the skin becomes blackish. Remove and set aside. Heat oil in a pan and fry the nuts till brown. Add the chopped garlic, nuts, bell peppers and parmesan to the blender keep grinding by gradually adding 2 tbsp of olive oil till you get a paste. Spoon the mix on the tortillas and add the aubergines. Drizzle with lemon juice and serve. You can also put the aubergine slices in a bowl. Pour the capsicum pesto sauce over it and drizzle with lemon juice and serve. You can make the same recipe using green pesto as well.
