With the opening of foreign trade with other parts of the world, a number of new ingredients found their way in the preparation of Indian recipes. The Portuguese and British introduced foods from the new world such as potatoes, tomatoes, squash, and chillies and their cooking techniques like baking. Despite the varied influences religious beliefs and culture have a played a crucial role in shaping the local cuisine. Sections of the Hindu community, Jain and Buddhism are one major reason for the widespread practice of vegetarianism in the society. The staple diet mainly comprises flour based breads called chapattis, vegetables, rice and pulses. Most Indian recipes are cooked in vegetable oil and ghee. The type of varies as per the region. North India The north Indian cuisine is dairy rich. With most gravy or curry and lentil based recipes using dairy products like yogurt, cottage cheese (panner) in their preparation. Other commonly used ingredients are nuts, spices and chillies. It is mainly the North Indian food which is popularly eaten world over.
