Indian Appetizers – Potato Frankie

Ingredients:
1/2 cup – Flour
1/2 cup – Oil
2 No – Onion medium chopped
1/8 tsp – Cumin powder
2 cup – Potato boiled mashed
1 No – Finely chopped green chillies
1/4 tsp – Garam masala
1 tsp – Dry mango powder
1 tsp – Dates (khajur) paste
1/2 tsp – Tamarind paste
Salt to taste

Garnish
2 No – Finely chopped green chillies
4 tbsp – Vinegar
1 No – Onion finely chopped

Method:
Mix all the ingredients except the ones for garnishing and set aside.
Mix the vinegar and chillies in a separate bowl and set aide.
Heat oil in a pan and add the potato mix and cook it on a low flame for 2-3 mins and then turn off the flame. Cover and keep.

Mix flour and water together and knead to form a dough.
Roll to make small chapattis.
Then in flat pan/tawa and cook the chapattis on both sides.
Roll out small portions of the mix in the form of a log and place it at one end of the chapatti.
Add a spoonful of vinegar chilli mix and onions on top of the potato log and wrap tightly.

Heat a heavy based pan (preferably cast iron) and add 1-2 tbsp of oil and than place each of the rolls on a cast iron pan and cook till lightly brown. Remove and Serve hot.

Option: You can use wheat flour or a mix of wheat (3/4) and cornflour (1/4) or make the chapattis from refined flour alone.
You can also add minced vegetables to the potato or replace potatoes with panner.
You can make these wraps by using a sauce base such as potaotes in garlic chilli sauce or schezwan.
