Indian Appetizers – Poha Pattice
Poha is basically uncooked basmati rice that has been rolled thin in a process similar to making rolled oats.
It is available 2 varities in it – thick and thin. It is better to use the thick one as the thin one gets mushy when rinsed under water.
Prior to cooking poha you need to rinse it under running water, without actually touching (just let the water flow). Then set it aside for a while so that excess water drains off and the poha puffs up.
Ingredients:
1 cup – Oil
1 cup – Poha (Rice flakes)
2 1/4 cup – Potatoes boiled mashed
2 tbsp – Green chilli paste
1 1/2 tbsp – Garlic paste
1/2 cup – Corn flour
Salt to taste
Method:
Sieve the poha wash very briefly (do not use much water) and set aside.
Prepare a cornflour batter, using little water (medium thick consistency).
Mix the poha with the remaining ingredients using a light hand. Roll into any desired shape.
Heat oil in a pan on a medium high flame.
Then dip the mix in the batter making sure the patties is well coated on all sides. And immidately add to the oil and fry on medium flame.
Drain and serve hot with green chutney or ketchup.
