Indian Appetizers – Pakoras
Ingredients:
Oil as needed
Vegetables – (potatoes, onions, chillies, peppers, cauliflower, spinach) chopped
1 cup – Gram flour (besan)
2 tbsp – Rice or Arrowroot flour (optional)
1 tsp – Carom seeds (ajwain) opitonal
1 tbsp – Green chilli paste
1 /2 tsp – Chilli powder
1/4-1/2 tsp – Turmeric powder
1 tsp – Coriander powder
1/4 cup – Water
1 tbsp – Garlic paste
1 tbsp – Ginger paste
Salt to taste
Method:
Mix all the ingredients (gramflour onwards).
Add water to make a medium consistency batter (add more water only if needed).
Thoroughly mix the batter you can also add 1/4 tsp soda and then prepare the batter.
Dip the above mentioned vegetables in the batter till well coated.
Heat oil in a pan and fry the pakoras. Serve hot with chutney or ketchup.
Tip: Add rice or arrowroot flour for making pakoras more crispy.
In case of only onion pakoras add 1/2 onion paste which should be grinded with green chillies, ginger, salt & garlic to the besan and rice flour (1½). Add very little baking soda, turmeric to the pakora batter.
