Indian Appetizers – Mixed Dal Vada & Vada Chaat

Ingredients:
Oil as needed
1 cup – Mixed dal (green mung dal, yellow tuvar dal, channa dal)
1 No – Onion finely chopped (option)
1 tbsp – Chilli finely chopped
1 tbsp – Garlic paste
1 tbsp – Ginger paste
2 tbsp – Corinader finely chopped
Salt to taste

Method:
Corasley grind the dals. If they do not get ground then add little water.
Add the rest to the ground paste.
Heat oil in a deep fry pan and when it gets really hot reduce flame and start adding the dal wadas to it.
Take 1-2 spoonful of batter in your hand and shake to form rounds and add it to the oil.
Cook on medium flame till brown remove and serve with chutney.

Instead of serving vadas by themselves you can add a twist and make a Vada Chaat Basket

Ingredients:
2 No – Tomato large diced
1 No – Onion large diced
1/2 cup – Boiled potatoes diced
1 cup – Yogurt or curd
1/2 cup – Sev
5 tbsp – Coriander finely chopped
1/2 cup – Khatti Meethi chutney
1/2 cup – Green mint chutney or
1/2 cup – Green chutney (non mint)
1 tbsp – Chaat masala
Salt to taste

Method:
Beat salt and curd very well. Take a small serving dish/platter and pour some of the  curd mix at the base.
Take the dal vadas and break into half using your hands. Then place them on the dish.
Sprinkle some chaat masala on the vada and pour some khajur or Khatti meethi chutney.
Next add a mix of tomatoes, onions and potatoes and then pour green chutney on top.
Lastly, garnish with sev and coriander and sprinkle some chaat on top again (option). Serve.

You can serve the chaat mix in a bowl by itself without adding the vadas.
