Indian Appetizers – Grilled Panner
Ingredients:
1 kg – Panner
1 No – Peppers (capsicum)
1 No – Tomato deseeded (optional)
2 tbsp – Gram flour
Water as needed
Marination
3/4 cup – Thick yogurt
1 No – Veg seasoning cube
1 tbsp – Garlic paste
1/4 tsp – Ginger paste
1/4 tsp – Red chilli powder
1/8 tsp – Chaat masala
1/4 tsp – Garam masala
2 tbsp – Cashew powder or
2 tbsp or Fresh cream
Pinch of tandoori colour (optional)
Sugar as per taste (optional)
Salt to taste
Method:
Combine the marinade ingredients in a bowl and set aside (you can use both cashewnuts and fresh cream in the marinade, or any one).
Then cut the panner and peppers in thick broad chunks and and soak them in the marinade for about 2-4 hrs. But, don’t soak the tomatoes. Dip the tomaotes in the marinade just prio to grilling.
Skew the vegetables on a skewer or secure with toothpicks.
Put the marinade ingredients on a foiled oven tray and baste wiht oil or butter. Grill till cooked on both sides.
Serve hot with green chutney or on a bed of salad.
Salad Recipe – shredded cabbage, capsicum, carrot, onion, salt, red chilli, chaat masala and place the grilled panner in the centre.
You can opt to buy ready tandoori mix – Pataks Tandoori Paste
Tip:You can also make a mixutre of tandoori paste (1/4 tsp) and yogurt.
You may choose to replace tomatoes with mushrooms and onions or add the two as well.
