Indian Appetizers – Batata Wada
This fritter recipe is a staple street and home food of Maharashtra (India), popularly known as wada pav (potato dumpling stuffed with chutney in bread).
This simple food can be savoured as a snack or served as an apptizer too.
Ingredients:
2 tbsp – Oil
1 cup – Potatoes boiled mashed
1/2 cup – Gram flour
1 1/2 tbsp – Garlic finely chopped
1 tsp – Mustard seeds
1 tbsp – Ginger finely chopped
1 tbsp – Green chilli finely chopped
1 tbsp – Curry leaves chopped
1/8 tsp – Turmeric
Salt to taste

Method:
Heat oil in a pan and once it sizzles add the mustard seeds. As they being to splinter add ginger, garlic and green chillies.
Cook till lightly fragrant (a min). Mix this in the boiled potatoes.
Add the turmeric, soda and salt to the flour.
Add water to the flour in a broad plate and mix with your palms till you get a smooth batter of medium dropping consistency.
Now make small balls of the potatoes dip it in the batter and deep fry till golden and drain on absorbent paper.
Serve with green/red chutney or with ketchup.
