Indian AppetizersIndian Appetizers - 8Batata Wada
Ingredients: 2 tbsp - Oil 1 cup - Potatoes boiled mashed 1/2 cup - Gram flour 1 1/2 tbsp - Garlic finely chopped 1 tsp - Mustard seeds 1 tbsp - Ginger finely chopped 1 tbsp - Green chilli finely chopped 1 tbsp - Curry leaves chopped 1/8 tsp - Turmeric Salt to taste Pinch of soda Method: Heat oil in a pan and once it sizzles add the mustard seeds. As they being to splinter add ginger, garlic and green chillies. Cook till lightly fragrant (a min). Mix this in the boiled potatoes. Add the turmeric, soda and salt to the flour. Add water to the flour in a broad plate and mix with your palms till you get a smooth batter of medium dropping consistency. Now make small balls of the potatoes dip it in the batter and deep fry till golden and drain on absorbent paper. Indian Appetizers - 9 Samosa
Ingredients: Oil for frying 1 cup - Refined flour 1 cup - Potatoes 1/2 cup - Peas Spice Mix 1 tsp - Fennel seeds big (badi saufn) 1 tbsp - Cumin seeds 1/4 inch - Cinnamon stick 1/8 tsp - Ginger powder 1 No - Bay leaf 1 tsp - Pomegranate seeds or Dry mango powder 3 No - Cloves 2 tbsp - Coriander seeds 1 No - Green chilli Salt to taste Method: Roast and grind the spice mix with out water into powder Mash the potatoes and peas roughly but leaving it lumpy (not smooth). Add the spice powder garam masala and mix well. Taste and adjust seasoning. Add warm water and salt to the flour. Rub in well to form a soft dough. Knead until the dough feels soft to touch. Now roll out the dough to form small chapattis and then slice them in equal half from the centre. Now hold one half in one hand and fold to form a one shape and using a drop or two of water seal it from above. Hold the cone upside down and fill with the prepared filling only 3/4th. Using little water press in one end of the flap and then other end and overlap it with the central part and seal the entire samosa. Heat oil in another pan over high flame and when it sizzles add the samosa and fry at low to medium heat until they are golden brown and drain on absorbent paper.
