Indian Appetizers - 6


Pav Bhaji


Ingredients:
Few buns (pav)
3 tbsp - Butter
5 No - Kashmiri Chillies
1 No - Onion medium chopped
1 cup - Tomatoes chopped
1 No - Peppers large finely chopped
1/2 cup - Potatoes boiled
1/2 cup - Peas boiled roughly mashed
2 tbsp - Garlic paste
1 tsp - Coriander powder
1 tsp - Cumin seeds
1 tsp - Pav Bhaji Masala
1/8 tsp - Nutmeg
Pinch or two fenugreek powder (kesuri methi)
Salt to taste
Coriander fresh


Method:
Soak Kashmiri chillies and garlic overnight.
Make the chilli paste separately and garlic paste separately.
Heat butter in a pan and when it sizzles add the cumin seeds.
Add the peppers and peas and cook till soft.
Add the garlic paste and cook over a high flame for about 2 -3 mins (you will get a strong garlic fragrance).
Add chilli paste, nutmeg, coriander powder and salt and continue to cook.
After a while add the onions and cook till translucent.
Add the tomatoes and pav baji masala and kesuri methi. Let the mix cook for about 8-10 mins.
Add the potatoes (roughly mashed) and mix well.
Add water to get a medium consistency. The mix should not be too thin or thick.
Garnish with coriander. Add spoonful of butter before serving (optional). Buy Ready To Eat Pav Bhaji


Indian Appetizers - 7


Frankie


Ingredients:
1/2 cup - Flour
4 tbsp - Oil
2 No - Onion medium chopped
1/8 tsp - Cumin powder
2 cup - Potato boiled mashed
1 No - Finely chopped green chillies
1/4 tsp - Garam masala
1 tsp - Dry mango powder
1 tsp - Dates (khajur) paste
1/2 tsp - Tamarind paste
Salt to taste


Garnish
2 No - Finely chopped green chillies
4 tbsp - Vinegar
1 No - Onion finely chopped


Method:
Mix all the ingredients except chillies, oil and vinegar in a dish.
Mix the vinegar and chillies in a separate bowl and set aide.
Heat 1-2 tablespoon oil in a pan and add the mix and cook it on a low flame for 2-3 mins.

Add some water to the dough and knead to form a dough.
Make some chapattis using the dough.
Heat a pan and cook the chapattis on both sides.

Roll out small portions of the mix in the form of a log and place it at one end of the chapatti.
Add a spoonful of vinegar chilli mix and onions on top of the potato log and wrap tightly.
Heat a heavy based pan (preferably cast iron) and add 1-2 tbsp of oil and than place each of the rolls on a cast iron pan and cook till lightly brown. Remove and serve hot.

You can use wheat flour or a mix of wheat (3/4) and cornflour (1/4) or make the chapattis from refined flour.
