History of PizzaHistory of pizza For years people have believed that pizzas originated in Italy, but ancient history has something else to say. Several cultures in the Mediterranean region relied on flat breads as a basic diet. This bread was usually made from dough and then baked in mud ovens. However the early Greeks termed such breads as planktons and seasoned them with oil, herbs and fresh olives. By the middles ages culinary art evolved further and through explorations newer ingredients came into play. With the introduction of Indian water buffalo the production of mozzarella cheese began. Cheese added a new dimension in pizza making. Despite several varieties of cheese are being used today. But there is no substitution for the fresh mozzarella di buffalo in an Italian pizza. At the turn of the 18th century tomatoes made their way into the culinary world. This radically changed the Italian cuisine and marked the birth of the true modern day Italian pizza. Today there are several varieties with regional variations for which pizza Margherita, may have set the standard. This pizza owes its name to Italy's Queen Margherita (1889) for whom a tri coloured pizza representing the Italian flag was made. Red stood for tomato, white for mozzarella and green for fresh basil. Spread he tomato sauce evenly all over the pizza base. Sprinkle basil leaves and top with cheese. Bake in a pre heated oven until cheese is bubbling and the edges turn golden brown.
