Healthy Cooking Recipes – Pilaf

Ingredients:
1 tbsp – Oil
2 cup – Brown Rice/White rice
3/4 cup – Mixed vegetables diced
1/4 cup – Beans
1 No – Onions diced
4 tbsp – Nuts sliced toasted (pecan, walnuts, cashews, almonds, pine)
1 tsp – Garlic minced
1 tsp – Ginger grated
1/4 cup – Clear stock
Salt to taste

Method:
Rinse the brown rice and bring to a boil. Then simmer and cook until tender. Drain and set aside prerferably 2-4 hours before adding vegetables.
You can use tinned beans or boil and cook 3/4th and set aside.
Heat oil in a pan/wok when hot, stir-fry the garlic and ginger and onion till colour changes.
Add the vegetables, beans, nuts and broth and cook till broth is completely absorbed by the vegetables.
