Healthy Cooking Recipes – Dappalam

Ingredients:
1/8 cup – Yam diced
8 No – Okra medium diced
3 No – Aubergines small diced
10 No – Spinach leaves chopped
1/8 cup – Red pumpkin diced
2 No – Sweet potatoes diced
1/8 cup – Coriander chopped
1/2 tsp – Turmeric
1 tbsp – Gram flour (besan)
2 tbsp – Jaggery
2 tbsp – Tamarind extract
4 No – Green chillies sliced
Salt to taste

Tadka
1 tbsp – Oil
1/2 tsp – Mustard seeds
1/2 tsp – Asafoetida
1 tbsp – Curry leaves
1 No – Dried red chilli broken
4-5 No – Fenugreek seeds

Method:
Boil 2 cup of water add salt, jaggery, turmeric and tamraind.
Add the vegetables once 3/4th tender then add the gram flour mixed with 2 tbsp water. Make sure the mix is smooth no lumps.
Add the flour and stir (adjust seasoning, water or flour if required).
Heat oil in a pan add the tadka ingredients and once they crackle add them to the vegetable mix.
Garnish with coriander and serve.
