Red Potato Mix


Ingredients:
2 tbsp - Oil
1 No - Onion chopped
4 No - Red potatoes or white chopped
1 No - Carrot sliced
8-10 No - Green beans sliced
1 No - Seasoning cube
1/4 tsp - Black pepper
2 No - Garlic clove
1 tsp - Lemon juice
1 tsp - Thyme chopped
1 cup - Spinach chopped
2 cup - Broth
Kosher Salt to taste


Method:
Heat oil in a pan add onions, garlic, vegetables and stir for a min.
Add the seasonings and continue to cook for a 2-3 mins.
Add the potatoes and broth.
Cook till vegetables are tender and serve hot.


Recipe - 13


Buddha's Delight


Ingredients:
2 tbsp - Sesame oil
1 No - Carrot sliced
6-8 No - Mushrooms sliced
2 No - Spring Onion sliced
1/4 cup - Water chestnuts sliced
1/4 cup - Baby corn sliced
6-8 No - Broccoli florets
6-8 No - Bamboo shoots
8-10 No - Snow peas
1/4 cup - Napa cabbage
1/4 cup - Tofu firm diced
1/2 cup - Broth
1 tsp - Ginger minced
2 No - Garlic cloves
2 tbsp - Soy sauce
1/4 tsp - White Pepper
Salt to taste


Method:
Mix 1 tbsp oil, salt, pepper, broth and soy sauce and keep aside.
Heat oil in a pan and add tofu and cook until lightly brown.
Add onions, ginger, and garlic and fry for a min.
Stir in the vegetables and stir-fry for 2-3 mins.
Add the broth mix to the pan and cook till most of the sauce is absorbed.
Serve hot with rice.
