Garlic Mashed Potatoes


Ingredients:
2 tsp - Olive oil
1 No - Potato large chopped
1 No - Garlic clove minced
1/4 tsp - Thyme
1 cup - Skimmed milk or semi skimmed milk
1/4 tsp - Pepper
Chilli flakes (optional)
Salt to taste


Method:
Peel and cook, the potatoes, in boiling water for ½ hour or until tender. Remove from heat. Drain. Cover the pot.
Heat butter or oil in a pan over low heat, cook garlic in milk until garlic is soft, about 30 mins.
Add the mixture to the potatoes. Beat with an electric mixer on low speed or mash with a potato masher until smooth. Garnish with chilli flakes and serve.


Recipe - 11


Cauliflower Wraps


Ingredients:
1 No - Cauliflower small grated
1 tsp - Ginger finely chopped
1 tsp - Garlic finely chopped
2 No - Green chilli finely chopped
1 tsp - Garam masala
1/8 tsp - Cumin powder
Salt to taste


Paste Mix
2 tbsp - Olive oil
1/4 cup - Sun-dried tomatoes
10 No - Black olives pitted finely chopped
1 No - Garlic clove crushed
1/4 cup - Basil leaves
1 No - Lemon juice
Pepper to taste
Salt to taste


Method:
Grind to make a paste. Sprinkle olives.

Heat oil in a pan and fry the ginger, garlic and chilli till brown
Add the seasonings and grated cauliflower and cook for 2-3 mins.
Warm the tortillas and wrap the mix in it and serve with the above dipping sauce. Buy Sicilian Green and Black Olives
