Grilled Aubergine Pepper Ingredients: 2 tbsp - Oil 4 No - Peppers small 2 No - Aubergine large roasted 1 No - Onion finely chopped 1 tsp - Garlic minced 1 tsp - Ginger grated 1/4 tsp - Chilli powder 1/8 tsp - Pepper 1/2 No - Tomato medium peeled (optional) Salt to taste Method: Heat oil in a pan on a medium flame and fry the onions till pinkish. Add garlic and ginger and continue for a minute. Add the tomato and seasoning and cook for a few minutes. Roast peel and mash the aubergine and then add it to the pan. Mix well and turn off the heat. Make a hollow by scooping out the top part of the peppers and add in the filling. Baste the outer covering with some oil and grill till the skin softens and blisters. Serve hot as an antipasto. Recipe - 9 Pineapple Tofu Stew Ingredients: 2 tbsp - Oil 1 No - Pepper diced 6 No - Mushrooms diced 1/4 cup - Tofu diced 3 No - Pineapple slices chopped 1 No - Spring Onion finely chopped 1/2 tsp - Garlic minced 1/4 tsp - Ginger grated 1 No - Green chilli finely chopped 1 1/2 cup - Stock 1 tsp - Vinegar (optional) 1/2 tsp - Thyme Pepper to taste Salt to taste Method: Heat oil in a pan on a medium flame and fry the onions till pinkish. Add garlic, chilli, ginger and continue for a minute. Add the tofu and cook for a 1-2 mins. Add the vegetables and cook for a 2-3 mins. Add the stock and seasoning and bring to a boil. Serve hot with rice or noodles. You can baste the tofu with a little oil and grill it before adding it in the mix.
