Healthy Cooking RecipesHealthy Cooking Recipes - 6 Veggie Noodle Ingredients: 1 pack - Soba noodles (200gms) 2 tbsp - Sesame oil 1 No - Carrot small sliced 4 No - Button mushrooms sliced 1/4 cup - Bok choy or Choy sum 1 No - Onion small finely sliced 1 No - Pepper small finely sliced 1/4 tsp - Garlic minced 1 tsp - Ginger root grated 1 tbsp - Soy sauce 1/4 cup - Soya mince (quorn) 1/4 tsp - Pepper 1 tsp - Ginger juice Sea salt to taste Method: Heat oil in a frying pan or wok on a medium flame and fry garlic ginger for a minute. Stir in the onions and sprinkle with a dash of sea salt. Add little water to cover the bottom of the pan, cover and cook over a medium heat until the onions are soft. Add the peppers, carrots and mushrooms and simmer for 3-5 mins or until tender. Add the greens followed by the noodles/rice. Cover and simmer on a low flame for 3-5 mins. Turn off the heat add ginger juice and serve. Recipes - 7 Veggies in Brown Rice Ingredients: 1 tbsp - Oil 1 cup - Brown Rice/White rice 1/2 cup - Broccoli or cauliflower chopped 1 No - Carrot small sliced 1/2 cup - Choi sum sliced 10 No - Mushrooms 1 tsp - Garlic minced 1 tsp - Ginger grated 1/4 cup - Clear stock 2 tbsp - Red chilli sauce 1 tsp - Tomato Ketchup 1 tbsp - Soy sauce 1 tsp - Vinegar 4 No - Tomatoes sliced Salt to taste Method: Use the small greenish red variety of tomatoes. Rinse the brown rice and bring to a boil. Then simmer and cook until tender. Drain and set aside. Or alternatively, if using white rice wash under cold running water to get rid off the carbs (refer to the cooking rice page). Heat oil in a pan/wok when hot, stir-fry the garlic and ginger till colour changes. Add the greens and other vegetables and cook till a little tender. Add tomatoes, chilli sauce and stock and mix.
