Lemon Ricotta vegetables


Ingredients:
1 1/2 tsp - Olive oil
2 No - Baby carrots sliced
1 No - Leek small sliced
1 No - Courgette small sliced
8 No - Snap beans sliced
1 No - Red bell pepper medium sliced
1/4 tsp - Garlic crushed
1 tbsp - Red pepper flakes
1 No - Spring greens
2 tbsp - Lemon juice
4 tbsp - Ricotta
1/4 tsp - Lemon rind
1 tsp - Red chilli flakes
Pepper to taste
Sea salt

Method:
Mix olive oil, salt, pepper, lemon juice, red chilli and garlic together.
Set up a steamer over simmering water. Steam the carrots, snow peas and leeks for the first few minutes.
Then add the rest and cook till tender as desired.
Remove and cool slightly. Add the seasonings and toss well.
Garnish with lemon zest and spring greens and serve. Buy Mozzarella and Ricotta Cheese Making Kit



Recipe - 3


Chinese Greens Stir-fry


Ingredients:
2 tbsp - Oil
1 No - Red pepper large sliced
8 No - Baby spinach leaves roughly chopped
1/4 cup - Mushrooms sliced
1 No - Onion sliced
1/2 cup - Choy sum sliced or other greens
2 No - Green chillies sliced
1/4 tsp - Garlic minced
1/4 tsp - Ginger minced
1 No - Shallot minced
1/4 tsp - Soy sauce
1/2 tsp - Brown vinegar
1 No - Vegetable cube
3 tbsp - Water
White Pepper to taste
Salt to taste
Or
Replace with a 1 tsp Black bean paste


Method:
Heat oil in a wok or a pan over high heat and add chilli, capsicum, shallot, ginger and garlic and stir-fry till fragrant.
Then add the rest and stir-fry for a few minutes.
Dissolve the stock cube in water and add it with the remaining seasonings.
Bring to the boil and then add choy sum or bok choy and tossing until wilted and bright green.
Serve with noodles or rice.
