Healthy Appetizers – Cajun Spiced Potatoes & Celery Corn Mix
Cajuns are descendants of French Canadians of the late 1700s, who are today who settled in southern Louisiana.
Cajun cuisine is a simple form of cooking, which is heavily dependant on ‘cajun spices’.
Cajun spices are bold spice mixes, sometimes, used instead of salt. Every Cajun seasoning blend tends to be a little different. The most commonly used ingredients are paprika, garlic powder, onion powder, black pepper, cayenne pepper, oregano and thyme.
It relies on the ‘culinary holy trinity’ of chopped green peppers, onions and celery. These 3 form the base for most of the cooking in the regional cuisines of Louisana, be it Creole or Cajun.
Preparation of Cajun/Creole dishes such as jambalaya, étouffée, and gumbo start from this base.
Ingredients:
4 tbsp – Oil
6-8 No – Potatoes medium
1 tsp – Paprika
1 tsp – Garlic powder
1 tsp – Onion powder
1 tsp – Oregano
1/4 tsp – Pepper
1/4 tsp – Cumin powder
1/2 tsp – Cayenne pepper
Salt to taste

Method:
Mix the seasonings in a bowl.
Wash, lightly peel or roughly scrub the potaotes and slice them and keep aside.
Mix oil (as needed) in the spice mix and then apply evenly on the potatoes.

Celery Corn Mix
Facts about celery
Celery is a multi faceted vegetable whose initial use was primarily as a herb.
Ancient Asian cultures harvested wild celery and brewed it to produce a tonic for stomach disorders and general vitality.
Romans awarded winners of sporting events with bundles of celery. While celery garlands were found inside tombs of ancient Egyptian pharaohs.
But according to historians the plant was first cultivated as a food in France in 1623. It later spread to Italy in 1700s and finally reached US in 1800s.
Celery not only is a versatile when it comes to cooking but is also filled with essential nutrients such as high in Riboflavin, Vitamin B6/A/C/K, pantothenic acid, and calcium etc.
Ingredients:
2 tsp – Oil
1 No – Celery stalk sliced
1/2 cup – Sweet corn kernels
1 No – Onion sliced
1 No – Capsicum sliced
6 No – Mushrooms sliced
1 No – Garlic clove
2 No – Tomato de-seed finely chopped
1 tbsp – Tomato Ketchup
1/4 cup – Parsley chopped
1/4 tsp – Brown Sugar
Pepper to taste
Salt to taste
Method:
Heat oil in a pan and fry the ginger, garlic and chilli till light brown.
Add the vegetables and cook for 2-3 mins.
Add the tomato, ketchup and seasoning and keep stirring.
Cover and cook for few minutes.
And then garnish with parsley and serve.
