Healthy Appetizers – Bean Delight
Green beans are also called as string/french/runner beans.
Like all vegetables if consumed fresh there are several more benefits that you can derive.
Try and buy lose green beans at the local store which have a smooth skin, firm in texture with a vibrant green colour.
Fresh green beans are very low in calorie, contain no saturated fat and are a very good source of vitamins, minerals, dietary fibre and plant derived micronutrients, thereby providing a god support of antioxidants.
The folic acid and B6 in green beans make them a “heart healthy” vegetable.
Carotenoid and flavonoid content of green beans gives this vegetable some unique anti-inflammatory benefits.
Ingredients:
2 tsp – Oil
10-15 No – Runner beans sliced
1 No – Spring Onion sliced
1/4 tsp – Ginger
1 No – Garlic clove
1/2 cup – Skimmed yogurt (optional)
1 tsp – Maize flour
1 No – Tomato peel de-seed finely chopped
Pepper to taste
Salt to taste
Method:
Heat oil in a pan and fry the ginger, garlic and chilli till light brown.
Add the spring onions and tomatoes and stir for 1-2 mins.
Mix the yogurt and maize flour thoroughly and then add it to the pan.
Add the beans in boiling water and when tender remove and then add to the mix. Serve hot.
