Cajun Spiced Potatoes


Ingredients:
4 tbsp - Oil
6-8 No - Potatoes medium
1 tsp - Paprika
1 tsp - Garlic powder
1 tsp - Onion powder
1 tsp - Oregano
1/4 tsp - Pepper
1/4 tsp - Cumin powder
1/2 tsp - Cayenne pepper
Salt to taste

Method:
Mix the seasonings in a bowl.
Wash, peel and slice the potatoes and keep aside.
Mix oil (as needed) in the spice mix and then apply evenly on the potatoes.
Bake till done.

Celery Corn Mix


Ingredients:
2 tsp - Oil
1 No - Celery stalk sliced
1/2 cup - Sweet corn kernels
1 No - Onion sliced
1 No - Capsicum sliced
6 No - Mushrooms sliced
1 No - Garlic clove
2 No - Tomato de-seed finely chopped
1 tbsp - Tomato Ketchup
1/4 cup - Parsley chopped
1/4 tsp - Brown Sugar
Pepper to taste
Salt to taste

Method:
Heat oil in a pan and fry the ginger, garlic and chilli till light brown.
Add the vegetables and cook for 2-3 mins.
Add the tomato, ketchup and seasoning and keep stirring.
Cover and cook for few minutes.
And then garnish with parsley and serve.
