Healthy Appetizers - 5


Peach Salsa Grill


Ingredients:
4 tbsp - oil
1 No - Green capsicum broad chunks
1/4 cup - Aubergine thick roundels
1/2 cup - Iceberg lettuce finely sliced
1 No - Red onion broad chunks
1/2 cup - Tofu broad chunks
1 tsp - Mixed herbs
1/8 tsp - 1/4 tsp - Pepper
Salt to taste


Salsa
2 No - Peaches peeled minced
4 No - Red Jalapeno minced
1 tbsp - Lemon juice
1 tbsp - Lemon grass
1/4 tsp - Red pepper flakes
Salt to taste


Method:
Baste the vegetables with oil and grill till crisp.
Add the seasoning and toss well.
Mix the salsa ingredients or blend it in a blender and keep aside for 1/2 hour.
Arrange the vegetables on plate garnish with iceberg lettuce.
Serve with salsa.


Recipe - 6


Mango Rolls


Ingredients:
Few hot dog breads
6-8 No - Cottage cheese sliced grilled
8 No - Black olives pitted
1/2 cup - Red cabbage shredded
1 No - Red onion roundels
2 tbsp - Parsley chopped
1/2 cup - Yogurt
Salt to taste


Salsa
2 No - Tomato deseeded finely chopped
2 No - Ripe mangoes peeled diced
1 No - Red onion finely chopped
3 No - Red jalapeno peppers
1 tbsp - Lemon juice
1/4 tsp - Pepper
Salt to taste


Method:
Mix the salsa ingredients or blend it in a blender and keep aside for 1/2 hour.
Mix jalapeno peppers, onion and black olives and mix.
Add seasoning, yogurt and mix well. Add the filling.
Pour salsa and garnish with a parsley leaf and serve immediately.
