Grilling - Rubs and Marinades

The entire idea of barbecuing or grilling is to create distinctiveness by giving a rich smoky flavour to foods.
The use of a charcoal grills as well as gas grills makes this possible.
Many gas grills come with a slide out smoker box. All you need to do is pull out the smoker drawer and fill it up with wooden chips. And follow the manufacturer's instructions and begin smoking on the gas grill immediately.
However, if your gas grill doesn't have a smoker box. Then do the following:


Collect some wooden chips and soak them for at least 20 mins in water.
Drain and place them aside in a heavy-duty aluminium foil or metal pan.
Fold the foil from all sides to make a seal.
Then poke several holes in the bottom of the pan and or poke several holes on the top side of the pouch.
Place the pouch under the grate or directly over the burner.
Heat the grill on high temperature until smoke appears. Adjust the temperature as per your cooking.
There are several flavours you can create with some changes.
Add a mix of herbs and seasonings. For instance take a bunch of fresh or dried herbs and soak them along with the wooden chunks for 20 mins in water or wine for flavoured smoke.

Rubs
Rubs are a type of dry seasoning blends put over foods before grilling. Rubs normally include spices and herbs. Using small quantities of rubs can be a great way to retain the natural flavour, yet enhance taste. Rubs seals the juices of the cooked food to form a delicious crust. Rubs can be applied prior to cooking, or refrigerated for several hours before grilling to give greater depth.

Marinades
Marinades are the liquid flavourings added to foods. They keep the cooked food moistened, thereby preventing it from drying over the grill.
Any food whether meat or vegetables require to be soaked in the marinade before hand. The time can range from a couple of minutes to hours.

Basting Sauces
