There are 2 methods for grilling foods – cooking over direct and indirect heat.
In direct heating the food is placed over the grill rack or coals. While indirect heating the grill is covered and then food is cooked. Tips for Grilling Food
Always be present during the entire grilling process. As flare ups can easily change to fire or the food may burn.
Soak foods in marinades or baste with BBQ sauces while grilling over coals it gives a unique zest to foods.
Grilling time is affected by the weather, and how long the food is being cooked.
Sauce with sugar and fat can cause flare ups easily. So always apply them towards the end of grilling (last 8-10 mins).
The temperature and thickness of the food when it’s placed on the grill will affect the cooking time. Cold and thicker foods will take longer to cook.
Wooden skewers should be soaked for at least 20 mins in water before use. They are best for soft foods like vegetables. While metal ones are more suitable for kebabs and meat.
Cooking temperatures can be varied.
