Easy to Make Appetizers – Zucchini Sticks
Be it Zucchini or Courgettes the traditional “Italian squash” are integral to Italian cuisine.
These bright green or yellow fleshy pulpy vegetables make a favoured choice for almost any cooked or raw recipes.
Raw zucchini can be served with dips, or can be combined with other ingredients to make reicpes. Blend it with cheese to make quiche recipes or casseroles, toast and added to pasta etc. The choice is limitless!!!!!
Interestingly, this is a simple zucchini finger food recipe made using herbs and cheese fried.
Ingredients:
1/2 cup – Oil
2 No – Zucchini 3/4 inch slices
1/2 cup – Bread crumbs
1/2 cup – Flour
1/2 tsp – Salt
1 tsp – Herbs
1/8 tsp – Pepper
2 tbsp – Parmesan cheese
Method:
Except zucchini and oil mix the remaining ingredients in a bowl.
Pprepare a cornflour batter, using little water (thick consistency).
Dip zucchini slices in it and fry till golden brown.
Serve with any sauce of your choice.
You could be a little creative and give it a tweak by using the alternative which I feel is better, if you want less fat.
1/4 cup – Oil
2 No – Zucchini 3/4 inch slices
2 No – Garlic cloves minced
1-2 tbsp – Herbs
1/4 tsp – Pepper
1/2 cup – Parmesan or processed cheese
Salt to taste
Combine the olive oil, garlic and fresh herbs, such as parsley or basil. Add the zucchini and mix till thoroughly coated. Simultaneously, melt cheese in a pot and then again dip the sliced zucchini till very well coated.
Line an aluminium foil on a baking tray and place the zucchini slices grill till golden brown and serve.
You may also choose to replace Zucchini with any other vegtable like cauliflower, carrots, potatoes, aubergines etc.
Tip: Cooking with Zucchini
Choose fresh and firm zucchinis, which are heavy in weight as compared to their size and have a smooth skin. But, make sure you use them within 2-3 days or else they tend to dry up and lose on their juiciness.
Remember always wash the zucchini just prior to use never before hand.
You do not need to peel zucchini, however if you find it gritty gently scrub with a vegetable scrubber or plastic scouring pad, or lightly scrap using a small knife.
