Easy to Make Appetizers – Croquettes

A relative of the croquette, known as  ‘korkke’ ( コロッケ ) is a very popular fried food in Japan. It is often served with ‘tonkatsu’ (とんかつ) sauce. Croquettes are usually made with potato and vegetable fillings or meat.

Ingredients:
1/2 cup – Oil
1/4 cup – Peas boiled crushed
1 cup – Potatoes boiled mashed
1/4 cup – Spring onions finely chopped
1/4 cup – Carrots boiled finely chopped
1-2 tbsp – Corn flour
1 tbsp – Ginger minced
1 tsp – Garlic minced (optional)
1 tbsp – Soy sauce
1 tsp – Curry powder
1/2 tbsp – Vinegar
1/4 cup – Bread crumbs
Salt to taste
Pepper to taste

For Japanese Croquettes use  Panko Japanese Style Bread Crumb

Method:
Heat oil in a pan. Add ginger, spring onions and fry for a min.
Add the remaining ingredients, except for bread crumbs and mix well.
Remove from heat and let the mix cool.
Shape them in a cylindrical form or any other shape of your choice.
Then roll them in the bread crumbs. Fry and serve with sesame sauce.

Varitation

Easy to Make Appetizers – Spinach Vegetable Croquettes & Yogurt Dipping Sauce

Ingredients:
200gms – Spinach
100 gms – Feta cheese
1/2 cup – Oil
1 cup – Rice short grained
1 cup – Potatoes boiled mashed
1/4 cup – Parmesan cheese
1/4 cup – Spring onions finely chopped
1 tbsp – Plain flour
1/4 cup – Water
1 No – Garlic clove minced
4 tbsp – Milk
1 tsp – Lemon rind grated
1 1/2 cup – Bread crumbs
Pinch of nutmeg
Salt to taste
Pepper to taste

Method:
Cook the rice in 2 cups of boiling water until tender and drain.

Mix all the ingredients in a bowl.
Shape them in a cylindrical form or any other shape of your choice.
Place on a tray and refrigerate for ½ hour.

Spread the bread crumbs on a grease proof paper.
Dip the croquettes in water flour mix and then coat with bread crumbs. Shake off the excess and again refrigerate for ½ hour.
Heat oil in a pan and fry the croquettes till golden and crisp and serve with the yogurt dip.

Yogurt Dip

Ingredients:
200gms – Thick yogurt
2 tbsp – Mint chopped
1 tbsp – Lemon juice
1 tsp – Sugar
Salt to taste
Pepper to taste

Method:
Combine all the ingredients chill and serve.
