Easy Party Appetizers – Stuffed Mushrooms

Ingredients:
3 tbsp – Olive oil or butter
10 No – Mushrooms large
1 cup – Spinach finely chopped
2 No – Shallot finely chopped
1/4 tsp – Garlic minced or finely chopped
2 No – Green chilli minced or finely chopped
1 cup – White sauce
Salt to taste

Method:
Heat butter in a fry pan and saute onion, garlic and green chilli till pink.
Add the spinach and cook till its water dries.
Add the white sauce and mix till well combined.
Remove and discard the mushroom stem.
Stuff the cavities of the mushroom cap with the filling and fry it in butter for a while. Serve hot.

Cooking with mushrooms
Clean mushrooms carefully. It is best to apply some tap water and brush of the dirt. Never soak because their spongy nature makes them absorb water.
Cut mushrooms prior to cooking or else they change colour fast (brown).
If you want to golden brown mushrooms then its best to cook them alone. They tend to throw off moisture and then reabsorb. Once they are done with this process then add the other ingredients such as herbs, spices etc.
Herbs and spices that accentuate the flavour of mushrooms include garlic, red pepper, tarragon, parsley, ginger, and thyme.
The ones which blend well are cream, butter, walnuts, cheese white wine and nuts.
