Easy Party Appetizers – Red Hot Potatoes
Ingredients:
1/2 cup – Oil
10 No – Baby Potatoes
2 No – Spring onions chopped
3 No – Dry red chilli
1 No – Green chilli
1 tbsp – Garlic minced/finely chopped
1/2 tsp – Ginger minced/finely chopped
3 tbsp – Ketchup
2 No – Veg seasoning cube
4 tbsp – Water
1/4 tsp – MSG (optional)
Pepper to taste
Salt to taste
Method:
If using the whole red chilli, soak it overnight or at least for 4-5 hours before use. Then grind it along with green chillies to make a fine paste.
Peel, wash and dry the potatoes. Lay them on a baking tray and coat well with oil. Grill till brown and then set aside. Alternatively, you can stir fry or shallow fry them.
Heat oil in a pan and add ginger, garlic and fry till colour changes. Then add spring whites (keep the spring greens aside) and cook till soft (2 mins).
Then add the chilli paste and cook for about 3-5 mins.
Dissolve the cube in water and add it with the remaining ingredients, except for potatoes. Let this mix cook further 5-7 mins.
You can add sugar if you want to cut down on the spice or sourness. If you find the paste too thick then you can add a little more water.
Add the potatoes (use whole or slice and use) and cook till well coated.
Garnish with greens. Serve hot with toothpicks.
