Dip Recipes – Chilli Con Queso

Chilli Con Queso is a traditional Mexican dip.
A smooth creamy sauce (like a fondue), made by combining cheese, cream, and chilli peppers.
It is normally eaten with tortilla or queso chips. Serves as an accompaniment to other Mexican dishes like fajitas, enchiladas.
This dip is served warm.

Chilli Con Queso Dip

Ingredients:
200 gms – Tomatoes blanched
2 No – Garlic cloves
2 stem – Spring onions chopped finely
2 No – Jalapenos peppers chopped
1 tsp – Taco seasoning
1 tbsp – Flour
1 tsp – Worcestershire sauce or Tabasco
450 gms  – Monterey Jack or Sharp cheddar cheese or Nacho cheese
1/4 tsp – Oregano
Salt to taste

Method:
Cut the cheese in chunks.
Combine all the ingredients in a food proecessor.
Pour the ingriedients in a pot and cook till cheese melts. Serve hot with chips or crackers.

If you want it spicier, along with tabasco add about 1-1/2 tsp of cayenne pepper as well.
