Dip Recipes – Aubergine Dip

Thai Spiced Chilli Dip (Nam Prik)

Ingredients:
1 No – Tomato medium chopped
1 No – Round green aubergine chopped
4 No – Shallots chopped
2 No – Green chilli fresh chopped
2 No – Garlic cloves chopped
4 No – Red chillies fresh chopped
2 tbsp – Lemon juice
2 tbsp – Soy sauce chopped
1 tsp – Sugar
1/2 tsp – Salt

Method:
Wrap the first 6 ingredients in a foil and place under a hot grill.
Once they soften remove and blend or pound to form a soft paste.
Add the rest and mix well.

Baba Gannoush (Lebanese dip)
1 No – Aubergine large roasted
1 No – Onion minced
3 tbsp – Tahina paste
4-5 No – Garlic paste
1/2 tsp – Mustard
3 tbsp – Thick yogurt
Sugar to taste
Salt to taste

Garnish:
Olive oil
Olives chopped

Method:
Prick the aubergine all over and place on gas or charcoal and keep turning and cooking till charred and soft.
Take off from heat peel the skin and mash the aubergine.
Add the seasonings and place the mix on a serving bowl.
Dribble olive oil and olives. Serve at room temperature with crisp pita.
