Pico de Gallo is a traditional Mexican fresh relish, which can be used in a variety of ways.
In some parts of Mexico it made with fruits, lime, chile powder and served as a fruit salad.
While the more traditional recipe, which is tomatoes, onion, peppers and jalapenos, can called as salsa mexicana, which, is a wonderful dipping sauce for tortilla chips.

Pico de Gallo


Ingredients:
1 tbsp - Olive oil
1 tbsp - Lime juice or White Vinegar
4 No - Tomatoes chopped
1 No - Green onions whole chopped finely
2 tbsp - Cilantro
1/4 tsp - Oregano or parsley
1 tsp - Hot pepper sauce
Salt to taste


Method:
Combine all chill and use as an accompaniment.


Dip Recipes - 7


Chilli Con Queso is a traditional Mexican dip.
A smooth creamy sauce (like a fondue), made by combining cheese, cream, and chilli peppers.
It is normally eaten with tortilla or queso chips. Serves as an accompaniment to other Mexican dishes like fajitas, enchiladas.
This dip is served warm.


Chilli Con Queso Dip


Ingredients:
1 cup - Tomatoes blanched
1 tbsp - Garlic chopped finely
2 tbsp - Onions chopped finely
2 No - Jalapenos Chopped
1 tsp - Taco seasoning
1 tsp - Flour
1 tsp - Worcestershire sauce or Tabasco
2 cup - Monterey Jack or Sharp cheddar cheese
1/4 tsp - Oregano
Salt to taste


Method:
Cut the cheese in chunks.
Combine all the ingredients in a food proecessor.
Pour the ingriedients in a pot and cook till cheese melts. Serve hot with chips or crackers.

If you want it spicier, along with tabasco add about 1-1/2 tsp of cayenne pepper as well.
