Curry Recipes – Thai Vegetable Curry
Ingredients:
1 tbsp – Oil
1 No – Bay leaf
3 tbsp – Tomato paste
3/4 cup – Vegetables of your choice
2 No – Shallots chopped
1 1/4 cup – Coconut milk
1/4 tsp – Sugar (if needed)
Salt to taste
Method:
Heat oil in a pan add bay leaf and fry the shallots till soft.
Add the curry paste and stir till fragrant.
Add the vegetables and cook for 3-4 mins.
Add the coconut milk and cook over a low flame till the vegetables get tender. Adjust seasoning.
Serve hot with rice.
Tomato Paste
1/4 cup – Onion chopped
1 tbsp – Lemon juice
1 tbsp – Lemon grass chopped
1 tsp – Lemon rind grated
1/8 cup – Coriander chopped
1/4 cup – Basil leaves
5 No – Dried red chillies soaked
1/2 tsp – Coriander seeds
1 tbsp – Tomato paste
3 No – Garlic cloves chopped
1/2 tsp – Black pepper
1/2 tsp – Salt
Method:
