Curry Recipes – Pumpkin Curry

Ingredients:
1 tbsp – Oil
1 cup – Pumpkin chopped
1/2 cup – Pigeon pea lentils or Mung beans (tuvar or moong dal)
1/2 tsp – Sambhar powder
1/2 tsp – Black gram (urad dal)
4 tbsp – Coconut paste
1/2 tsp – Rice flour
1/4 tsp – Mustard seeds
1 tsp – Curry leaves
1/2 cup – Water
Salt to taste
Pinch of asafoetida

Method:
Pressure cook or boil and cook tuvar dal till mushy.
Heat water in a stock pot add sambhar powder and vegetables cook till pumkin is tender.
Add the dal and bring to a boil.
Add the coconut, rice flour salt and warm water (approx. a cup) and boil well.
Heat oil in a pan and add the mustard, curry leaves, asofetida and urad dal once it crackles add it to the above mix. Serve.
